We have had several vegetarian guests to dinner at our house lately, and I am so glad as I love non-meat dishes!
We didn’t eat a lot of meat before the kids came along, but ever since they arrived our inner carnivores have run ravenous.

One night, Anton made his artichokes cooked with lemon and pepper, but instead of serving it with the lemon on the side, put the lemon inside the artichoke. It looked beautiful!

The main dish was grilled portobello mushrooms, served over a puff-pastry “puff”? “Toast”?
The sauce was tomato and spinach, with asparagus and broccolini to finish it off. It was delicious AND lovely to look at!

The strawberries were so huge that Sage reserved the largest for herself. Darn the good manners and the guests!

Another evening we had rigatoni in a cherry tomato, basil, and cream sauce with crimini mushrooms.
It was goooood.

Yes, it’s a lot of butter, but the end result is worth every calorie!

A wonderful meal.
Now if only we could get the kids to eat the vegetables…..
